Avocado & Pecan Brownies

After a long while we are back! And this time we wanted to share something sweet and delicious with you so, let us introduce you to the best Avo & Pecan Brownies!

A few days ago we went to the park to start the “picnic season” and we were in charge of the dessert.

As some of you know, avocado is one of our favourite ingredients so we decided to make it part of our creation. Thanks to this magic ingredient, our brownies are so smooth and moisturised.

Have a look at the recipe and we hope you enjoy them as much as we did (they just lasted a few hours :))

INGREDIENTS:

  • 2 mashed avocados
  • 1 cup wholemeal flour
  • 1/2 teaspoon baking powder
  • 3 tablespoons coconut oil
  • 1/8 cup brown sugar
  • 100 grams dark chocolate
  • 6 tablespoons unsweetened cocoa powder
  • 8 tablespoons honey
  • A pinch of salt
  • 2 tablespoons water or plant based milk
  • 1/2 cup pecan nuts

METHOD:

Preheat oven to 175 degrees Celsius and grease a baking tray.

Melt the dark chocolate and, in a large bowl, combine it together in a food processor with the mashed avocado, sugar, flour, baking powder, salt, cocoa, coconut oil, honey and water/plant based milk.

Once everything is well mixed, add in the pecan nuts and pour the mix into the baking tray.

Bake for about 15 min and… tadaaaa! You’ll just need to let them cool down and cut them into small pieces.

Después de un largo tiempo hemos vuelto con una receta que nos encanta! Brownies de chocolate, aguacate y nueces pecanas. Mmmmm.

El otro día, ya que el verano se ha adelantado, inauguramos la temporada de picnic, y nosotras decidimos encargarnos del postre.

Esta vez hemos utilizado aguacate, uno de nuestros ingredientes favoritos, como algunos ya sabéis! El aguacate lo usamos como alternativa más saludable a la mantequilla o el aceite y la verdad es que hace que los brownies salgan súper suaves y nutridos.

Aquí os dejamos la receta, esperamos que os guste!

INGREDIENTES:

  • 2 aguacates maduros machacados
  • 125 gramos de harina integral
  • 1/2 cucharita de levadura
  • 1 pizca de sal
  • 3 cucharadas de aceite de coco
  • 2 cucharadas de azúcar moreno
  • 100 gramos de chocolate negro
  • 6 cucharadas de cacao en polvo desgrasado
  • 8 cucharadas de miel
  • 2 cucharadas de agua o leche de origen vegetal
  • 60 gramos de nueces pecanas

ELABORACIÓN:

Precalienta el horno a 175 grados y engrasa una bandeja.

En un recipiente, añade todos los ingredientes y mézclalos bien con un procesador de alimentos: aguacate, harina, levadura, sal, aceite de coco, azúcar moreno, chocolate negro (previamente derretido), cacao en polvo, miel y agua o leche.

Una vez que esté todo bien mezclado, añade las nueces pecanas y coloca la masa en la bandeja.

Pon unas nueces por encima para decorar y métela al horno unos 15 minutos aprox.

There are lots of types of vegetables, you have plenty of choices, you can’t get bored and you don’t have any excuse to eat healthy. We like to combine our plant-based diet with delicious legumes, yummy seeds and nuts. We love eating well and enjoy every mouthful. Here are some vegetarian/vegan dishes we usually have for lunch or dinner!

Why is it important to eat vegetables?

They are very nutritional and contain a good amount of vitamins, minerals, fiber and antioxidants. Having veggies and fruits in your diet helps your body to protect itself from diseases and improve your immune capacity. Go for greens 😀

  • Leftovers! Yay!! Grilled eggplant, paprika chickpeas, roasted potatoes with pepper, marinated soya tofu, brown couscous with cherry tomatoes and sunflower seeds (fresh basil on top). Wonderful!
