These pancakes are the best, so fluffy, moist and sweet with a sutil touch of coconut. They are also wholegrain, easy to make and super satisfying, that it’s all you need to be happy!

Our favorite meal of the day is breakfast! YAY! We also like pancakes for lunch or dinner (aka brinner). My mum used to make me pancakes when I was kiddo, so it brings me beautiful memories when I eat them.

I have made a vegan version. Although I am still vegetarian I think soya, coconut & almond milk are more fun to use while cooking and don’t forget they are cruelty free… so we don’t see the point in using diary!

These pancakes are the best, so fluffy, moist and sweet with a sutil touch of coconut, I haven’t added any sweetener in the batter. Coconut milk is a must for me, It’s always in my cupboard. You won’t notice they are vegan and super healthy.

We use flax egg*: 1 Tbsp ground Flaxseeds + 3 Tbsp water. *An egg substitute in baking. You can use 1 ripe banana instead if you don’t have flaxseeds. Flaxseeds are a great replacement, full of Omega 3 essential fatty acids, antioxidants and fiber.

These homemade oat pancakes are wholegrain, easy and super satisfying, that it’s all you need to be happy. No excuses to not make them!

ULTIMATE OAT VEGAN PANCAKES

Time: Ready in less than 20 minutes. Serves: 2 people.

INGREDIENTS

  • 1 cup rolled oats.
  • 1 cup wholemeal flour.
  • 1 +1/2 cups plant based milk (I use coconut & rice milk)
  • 1 tsp baking soda.
  • 1 tbsp ground flaxseeds + 3 tbsp water (to make the flax egg*)
  • 2 tbsp coconut oil and some more to grease the frying pan.

Important: don’t forget natural sweeteners, I use maple syrup & loads of fruits to put on top.

METHOD

  1. Make a flax egg*.
  2. Add in a large mixing bowl the dry ingredients: Rolled oats, wholemeal flour and baking soda and whisk again.
  3. Then add your plant based milk, the flax egg and finally the coconut oil and stir until combine.
  4. Heat a large non-sticking fry pan and grease it with some coconut oil. Put the batter on medium heat. Make your AWESOME PANCAKES!!!! There should be 6 or 7 pancakes. Flip them when bubbles appear.
  5. Top with your favorite fresh fruit, maple syup & nuts of your choice.

We are in love with these incredible “Twix” Bars with Banana Date Caramel. It’s only made with a few healthy ingredients. Could it look and taste more delicious?

We are passionate about real food, these “Twix” Bars are like a piece of heaven in our mouth. This recipe is the best and soo easy to make. They are raw and vegan coated with dark chocolate of course, with an oat and a flax seed base. We made a different version to @crazyvegankitchen, one of our favourite vegan girls. Believe it, it’s just so good! Do you need more reasons to make it?

Ingredients:

Biscuit base:

  • 8 Dates.
  • 1 cup of Oats.
  • 1 tablespoon of Flax seeds.
  • Seeds of 1/2 Vanilla pod.
  • 3 tablespoons of water.

Banana date caramel:

  • 1 Banana.
  • 12 Dates.
  • 1 Teaspoon of Stevia.
  • A pinch of Salt.
  • Seeds of 1/2 Vainilla pod.
  • 2 tablespoon of water.

Vegan Dark Chocolate coat.

Banana Date Caramel Bars

Preparation:

  1. First make the oat flour putting the cup of oats in a food processor, then join together the rest of the ingredients of the “twix” base. Soak the dates before, so it is easier to process everything. You will obtain a mixture, then press the mixture in a tray until you obtain the shape of a rectangular giant biscuit. Leave it in the freezer.
  2. While the “twix” biscuit base is in the freezer, we make the banana date caramel. How? We follow the same method. Soak the dates, after that we combine the banana, stevia, salt, the seeds of the 1/2 of a vanilla pod and the water in the food processor. You will obtain a smooth mixture, that’s the banana date caramel!!! With the help of a spatula or a spoon, spread the mixture on top of the biscuit, and leave it again in the freezer for five hours.
  3. Now, you need to cut the giant biscuit in little rectangular bars (like the shape of a Twix) while you are melting the vegan dark chocolate. Coat the bars with the dark chocolate one by one and place it onto a tray with baking paper. Store your homemade healthy “twix” bars in the freezer. Wait until they are ready and eat them… all without guilt!

Aquí están por fin nuestras barritas “Twix”… Hechas con poquísimos ingredientes, todos sanos y naturales. Tienen buena pinta, ¿verdad?

Como ya sabéis, nos apasiona la comida de verdad, y más todavía si es sencilla y rápida de hacer. Nuestras barritas “Twix” son veganas, hechas con chocolate negro puro y con una base de avena y semillas de lino.

Esta receta es una versión de una de nuestras chicas veganas favoritas, @crazyvegankitchen. ¡Razones suficientes para ponerse manos a la obra!

Ingredientes:

Base de galleta:

  • 8 dátiles.
  • 1 taza de avena.
  • 1 cucharada de semillas de lino.
  • Semillas de media vaina de una vainilla.
  • 3 cucharadas de agua.

Caramelo de plátano y dátiles:

  • 1 plátano.
  • 12 dátiles.
  • 1 cucharadita de estevia.
  • 1 pizca de sal.
  • Semillas de media vaina de la vainilla.
  • 2 cucharadas de agua.

Cobertura de chocolate negro vegano.

Elaboración:

  1. Primero hacemos la harina de avena poniendo la avena en un procesador y luego lo juntamos con el resto de los ingredientes de la base de galleta. Es bueno poner los dátiles a remojar en agua; así es más fácil mezclarlo todo. Una vez conseguida la masa, la extendemos sobre una bandeja y presionamos suavemente formando una galleta rectangular grande. Lo metemos en el congelador.
  2. Mientras la base de galleta de nuestro “Twix” está en el congelador, preparamos el caramelo de plátano y dátiles. Remojamos los dátiles y después lo mezclamos con el plátano, la estevia, la sal, las semillas de vainilla y el agua con el procesador. Obtendremos una pasta suave, ahora podremos extenderla con la ayuda de una cuchara o espátula sobre la base de nuestra galleta (debe estar dura) y lo meteremos en el congelador al menos 5 horas para que después nos sea más fácil de manipular.
  3. Una vez que está todo listo, cortamos la galleta gigante en barritas pequeñitas tipo Twix, mientras por otro lado derretimos al baño maría el chocolate negro vegano. Una vez derretido el chocolate, recubrimos cada barrita una por una y las ponemos sobre papel de horno encima de una bandeja. Guardamos nuestras “Twix” caseras en el congelador hasta que se solidifique el chocolate. ¡A disfrutar!, y comed sin remordimientos.

Having a plant based diet implies the necessity to supplemet our diet with nuts. They are essential to give us our every day fuel, because we don’t stop and we exercise daily.

That’s why we love nuts, they are delicious, protein-rich, have unsaturated fats, fiber, minerals and vitamins and are also shown to be beneficial for cardiovascular health.

Here is the recipe of our Nutty & Date Granola Bars.

Ingredients

– 2 cups of Oats.

– 150 grams of Dates.

– 1/3 Raw Almonds.

– 1/3 Peanut Butter.

– 1 spoon of Soya Margarine.

– 8 ounces of chocolat with orange.

– A pinch of shredded cinnamon.

Preparation

Pit the dates and place them in a food processor with the peanut butter and the melted soya margarine. Blend all the ingredients together.

Once is all well blended, add the oats, the cinnamon, the chocolate ounces and the almonds and mix everything together again.

Put the dough in a baking tray (don’t forget the baking paper). 170ºC during 20 minutes.

Let it cool down and cut it in squares.

And voilà!!! Nutty granola bars 🙂 Careful, They are very addictive.

¡Holi, rollitos de canela!

Ser vegetarianas implica la necesidad de complementar nuestra dieta con frutos secos, imprescindibles para darnos el aporte de energía necesario diario, ya que hacemos ejercicio habitualmente y no paramos.

Por eso nos encantan los frutos secos, son deliciosos, ricos en proteínas, grasas insaturadas, fibra, minerales y vitaminas, por lo que son beneficiosos para nuestra salud.

Son indispensables para la dieta de cualquier persona que realice esfuerzos físicos o mentales. Además su consumo regular reduce el riesgo cardiovascular.

Aquí esta la receta de nuestras barritas de granola con frutos secos dátiles y un toque de canela. Sin azúcar refinado añadido. 🙂

Ingredientes

– 200 gramos de copos de avena.

– 150 gramos de datiles.

– 50 gramos de almendras crudas.

– 65 gramos de mantequilla de cacahuete.

– 1 cucharada de margarina de soja.

– 8 onzas de chocolate con naranja.

– Media rama de canela rallada.

Preparación

Deshuesar los dátiles y ponerlos en un procesador de alimentos, junto a la mantequilla de cacahuete y la cucharada de margarina de soja derretida, hasta que se quede una pasta.

Añadir esa pasta con la avena, la canela rallada, los trozitos de chocolate negro con naranja y las almendras crudas. Mezclarlo hasta que quede homogéneo.

Extender la mezcla sobre una bandeja de horno, sin olvidar el papel de horno. Dejar a 170ºC unos 20 minutos.

Esperar a que se enfríe y cortar en cuadraditos.

Spinach Quiche with an Oat Crust

Again! Another recipe made with oats…this time a savoury one!

You will make this recipe gazillion times. When you decide to be veggie, many people say to you: Are you crazy? How are you going to live without meat?

You will make this recipe gazillion times. When you decide to be veggie, many people say to you: Are you crazy? How are you going to live without meat?

We are proud of how we eat. Having a vegetarian diet is an option, and usually when we go out with our friends it’s difficult to find a place where we can eat good stuff, it’s sad but it’s true. We are used to it now, but at first we felt like weird people.

So we decided to cook our food and enjoy it at home (That doesn’t mean that we never go out for dinner, we absolutely do!) We also invite our friends and family and share with them! Like we do with you!

The other day we made a Spinach Quiche with an Oat Crust. It was great!

Ingredients

For the crust:

– 200gr of oats.

– 75gr soya margarine.

– 1 egg.

– 1 teaspoon of thyme.

– salt.

Filling:

– A paquet of fresh spinachs (not frozen).

– 2 eggs.

– 100 ml vegetable cream.

– Shredded cheese (the one you like).

Preparation

Preheat the oven 180ºC and grease a baking dish. Put in a bowl the ingredients to make the crust: oats, the melted soya butter, egg, thyme and salt in a bowl and mix everything. After that, put the mixture in the base of the baking dish with the help of a spoon. Cook the crust for 20-25 minutes.

While the crust is in the oven prepare the filling. Steam the spinachs, drain them very well. Beat the eggs with the vegetable cream, add the spinach and put some salt, not too much, because maybe you would like to put some shredded cheese on top. Add the filling over the crust and put it again into the oven for half and hour.

We serve it with a side of salad: different types of lettuce, walnuts & pomegranates.

Crunchy and mouth watering are the words to describe the results!

¡Hola bayas!

Otra vez receta con avena… pero esta vez receta salada 🙂

Harás esta receta millones de veces. Cuando decides ser vegetariana, todo tu alrededor te pregunta: ¿Cómo vas a poder vivir sin comer carne?

Nosotras estamos orgullosas de cómo comemos. Ser vegetariano es una opción, y normalmente cuando salimos con nuestros amigos es difícil encontrar un sitio dónde poder comida de verdad y ponernos de acuerdo, es triste pero es verdad. Ahora estamos acostumbradas, pero al principio nos sentíamos un poco “ovejas negras”.

Así que decidimos cocinar y disfrutar en casa. Eso no significa que no salgamos nunca a comer fuera, lo hacemos y a menudo, lo único que tenemos que indagar antes en google el sitio adecuado.

Quiche de Espinacas con base de avena.

Ingredientes

Para la masa: – 200 gr de avena. – 75gr de margarina de soja. – 1 huevo. – 1 cucharadita de tomillo.

– sal al gusto.

Para el relleno

– 1 paquete de espinacas frecas.

– 2 huevos.

– 100ml de nata vegetal.

– Queso rallado (del que más te guste).

Elaboración

Precalentamos el horno a 180ºC y engrasamos el recipiente donde vamos a cocinar la quiche. Mezclar en un bowl los ingredientes para la masa: avena, huevo, margarina de soja, tomillo y sal. Amasamos y extendemos la masa en el recipiente con ayuda de una cuchara. Hornear durante 20-25 minutos.

Mientras la masa está en el horno preparamos el relleno. Cocemos las espinacas y secarlas muy bien, ya que sueltan mucho agua. Batimos los huevos, añadimos la nata vegetal, las espinacas y un poquito de sal. Añadimos el relleno al recipiente con la base de la quiche ya cocinada, queso rallado del que más te guste por encima y lo metemos todo junto al horno 30 minutos hasta que se gratine bien.

Puedes acompañar la quiche con una ensalada de lechuga variada, frutos secos y granada

Crujiente y deliciosa son las palabras para describirla.

Peanut Butter & Chocolate Chip Oat Cookies

Some people love licking the cookie mixture out of the bowl… we are that kind people! And you?

We are addicted to peanut butter and chocolate chip cookies, so we have mixed both and made an insanely amazing version of them.

It has been a long time since we haven’t taken a sit to write a post. We love the idea of sharing with you our veggie healthy style and our recipes so you can made it at home. Lately, we are quite busy, but with lot of pictures and content in the desk, like this baby!

We are addicted to peanut butter and chocolate chip cookies, so we have mixed both and made an insanely amazing version of them: Peanut Butter & Chocolate Chip Oat Cookies.

Attention! The peanut butter we used is homemade: NO ADDITIVES in it. It scares when you read the composition facts of a peanut butter can, almost all the ingredients are junk. Please, put it back on the shelf if you don’t recognise the procedence of something.

You can’t feel guilty to try it, because it only has three ingredients: raw peanuts, a little bit of olive oil and salt. That’s it!

Soon we will share how we make it, because today we will tell you how we made our homemade Peanut butter & Chocolate Chip Oat Cookies.

No refined sugar added, we used maple syrup and dates instead. You know our passion with oats, and wholegrain products, we don’t like plain flour at all, so we usually buy Oat Whole Flour. The healthy version for our sweet tooth.

Ingredients:

3 – 1/3 cups oat whole flour.

1/2 teaspoon of baking powder.

1/3 cup soya margarine (Alpro).

1/3 cup peanut butter (homemade like us or not: It’s up to you!).

2 – 1/3 cups chocolate chips.

1 egg.

2 spoons of Maple Syrup.

5 dates.

Preparation:

First preheat the oven 170ºC while you are making the dough. Melt the soya margarine and put it with the oat whole flour and the baking powder in a mixing bowl, after add the peanut butter, the maple syrup, the chopped dates and the egg. Mix everything together very well with a hand blender. Finally add the chocolate chips… and oh, my!

Some people love licking the cookie mixture out of the bowl… we are that kind people! And you?

To make the cookies, we take a spoon with the cookie dough and we do small balls with our hands, we put them over the oven tray with baking paper and we smash the dough balls with a spoon getting the form of a cookie one by one.

15 minutes in the oven and surprise!!! Wonderful cookies for everyone.

¡Hoooola caracolas!

Lo sentimos por no publicar muchos posts últimamente, estamos bastante ocupadas, pero tenemos muchas cosas ricas guardadas para mostraros poco a poco 🙂

Para los que no lo sabéis, somos adictas a la crema de cacahuete y a las cookies de chocolate, así que hemos fusionado ambas y ha salido algo asombroso: Cookies de crema de cacahuete y pepitas de chocolate.

¡Atención! La crema de cacahuete es 100% casera, sin aditivos. Simplemente utilizando cacahuetes naturales, un poco de aceite de oliva y sal. Mejor ni mirar qué es lo que lleva la crema del bote. Si desconoces alguno de los ingredientes, o si no puedes pronunciar el nombre de alguno, mejor déjalo en la estantería.

No hemos utilizado azúcar refinado, lo hemos sustituido por dátiles y sirope de arce. No somos muy amigas de la harina procesada, así que casi siempre utilizamos harina de avena integral, hay que tratar de buscar siempre la opción más sana.

Ingredientes:

3 – 1/3 tazas de harina de avena integral.

1/2 cucharadita de levadura en polvo.

1/3 taza de margarina de soja (Alpro).

1/3 taza de crema de cacahuete.

2 – 1/3 tazas de pepitas de chocolate.

1 huevo.

2 cucharadas de sirope de arce.

5 dátiles.

Preparación:

Precalienta el horno a 170ºC. Derrite la margarina y mezclala en un bol junto a la harina y la levadura. Luego añade la crema de cacahuete, el sirope de arce, los dátiles y el huevo. Mezcla todo muy bien con la batidora, después añade las pepitas de chocolate y tendrás la masa.

Ahora simplemente tienes que hacer bolitas, del tamaño cogiendo como referencia una cucharada de mezcla y colocarlas en una bandeja de horno con papel de cocina encima. Aplasta las bolitas con la ayuda de una cuchara una por una y ¡al horno!

In this case, we talk about oats. We use it for everything: porridge, granola, quiches, pizza, cookies, cakes…The list is endless. “Trying to do the same thing over and over again but making it fresh and different eachtime”. We can have porridge everyday of our life, but why not innovate?

The first experiment was succesfull, baked cinammon oats with smashed bananas and bluberries on top. We are drooling just looking at the picture.

Baked Oats 1

The first experiment was succesfull, baked cinnamon oats with smashed bananas and bluberries on top. We are drooling just looking at the picture. It’s sad that now all of this is in our tummies. It’s insanely delicious and so gooey, that’s why we have to share it with you.

We have the bad habit of not measure anything and put whatever we find in the kitchen.

So, we can’t tell you the exact amount, but cooking is not an exact science. We think it’s more fun like this!

Ingredients:

– 1 cup of oats.

– 1/2 cup of milk (which one you prefer: lactofree, almond, coconut or soya milk).

– 2 smashed bananas.

– 1 teaspoon of baking powder.

– A handful of blueberries.

– Cinnamon.

– Walnuts to put on top (optional).

Soak the oats with the milk, and add the smashed bananas and the baking powder, put the cinnamon you like and mix them up. Put everything in a little loaf pan and add on top some bluberries.

Leave it in the oven for about 20-30 minutes (180ºC). This allow the blueberries melt into the baked oats. We love nuts, so after you can serve it with walnuts and add some honey. But the bananas give a sweet taste. Glorious!

Hola Bonitos!

Ser vegetariano no es para nada aburrido. Con los mismos ingredientes puedes hacer cosas geniales y muy diferentes. ¡Nos encanta comer sano y divertido!

Hoy hablamos de la avena. La usamos para todo: porridge, granola, pizza, quiche, cookies, muffins... La lista es interminable. “Utilizando los mismos ingredientes una y otra vez pero dándoles un toque nuevo y diferente”. Nosotras podríamos desayunar porridge todos los días de nuestra vida, así que pensamos ¿por qué no innovar?

Aquí está nuestro exitoso primer experimento, avena al horno con un toque de canela, plátano y arándanos. ¡Se nos cae la baba solo de mirar la foto! Es una pena que ya hayamos acabado con todo… ¡Está tremendamente bueno!

Tenemos la mala costumbre de no medir los ingredientes, y poner cualquier cosa que nos encontremos en la cocina.

Así que, no os podemos decir la cantidad exacta. La cocina no es una ciencia exacta y ¡creemos que es más divertido así!

Baked oats

Ingredientes:

– 1 taza de avena.

– 1/2 taza de leche (del tipo que más te guste: sin lactosa, de soja, de coco, etc.)

– 2 plátanos aplastados.

– 1 cucharita de levadura en polvo.

– Un puñado de arándanos.

– Canela.

– Nueces (opcional).

Ponemos a remojar los copos de avena con la leche, añadimos los plátanos triturados con un tenedor (tienen que estar bastante maduros) y la levadura, añadimos la canela al gusto y mezclamos bien. Colocamos la mezcla en un molde pequeñito para hornear y ponemos los arándanos encima.

Dejamos en el horno aproximadamente unos 20-30 minutos, a una temperatura de 180ºC. Los arándanos se derretirán y le darán un sabor aún más especial. A nosotras nos encantan los frutos secos, así que en este caso añadimos nueces. El platáno le da un sabor dulce, pero puedes ponerle un poco de miel por encima. Glorioso!
