We eat falafel very often, so we wanted an easy and delicious recipe we can make at home. We tried this one and really enjoy it. They are so crispy and satisfying. Come on make it at home!

We love falafel so much…mmm, It’s one of our favourite vegetarian dishes. We are big fans of this recipe and the best part is that it only has a few ingredients. We try to avoid the frying pan, so we bake them instead, it is the healthier option for us and they are so yummy. You can fry them if you prefer it  though! It’s just a suggestion 🙂

BEST EVER BAKED FALAFEL RECIPE:

PREPARATION TIME 15 minutes  COOKING TIME 25 minutes 180ºC

INGREDIENTS 

  • 350 gr Dry Chickpeas
  • 2 Medium Red Onions
  • 2 Garlic Cloves
  • A handful of Parsley
  • 1 + 1/2 Teaspoon of Ground Cumin
  • 1 Teaspoon of Baking Powder
  • Salt & Pepper
  • Extra: Some Chickpea Flour or Plain Flour (to make the falafel balls).

INSTRUCTION

  1. Soak the chickpeas in cold water two days before (at least 48hours).
  2. Wash & drain the chickpeas very well and after that introduce them to a food processor with the rest of the ingredients (red onions, garlic cloves, parsley, ground cumin, baking powder, salt & pepper).
  3. Blend until everything come together (you will obtain a crumbly dough), then shape into Falafel balls with your hands (add some chickpea flour to help).
  4. Bake around 25 minutes 170ºC until they are golden brown.
  5. Refrigerate or freeze the rest of the Falafel balls you are not gonna eat!

You will need this in your plant-based diet. Perfect in all veggie dishes. Serve your Baked Falafel with Sweet potatoes and grilled eggplant with strawberries, spinach leaves and some avo with some capsicum on top:

Goodnesstipo aguacate (transparente)You only need a few ingredients, and you will be ready to enjoy. Why can’t fast food be healthy?

Ingredients:

  • Organic whole spelt tortillas.
  • A jar of kidney red beans (drained).
  • Baby Spinachs.
  • Red pepper, yellow pepper.
  • Fresh Tomatoes.
  • Avocado.
  • Lime.
  • Sea salt & pepper.

Instructions: 

Cut the red pepper, yellow pepper, tomatoes & avocado in little dices. Then, add the lime juice, sea salt & pepper to the drained kidney beans (wash them properly before).

Prepare the tacos, put over the whole spelt tortilla a base of baby spinach leaves, the kidney red beans & the rest of the colorful vegetables.

Easy Vegetarian Recipes: Eat the Rainbow

Hi there!

There are lots of types of vegetables, you have plenty of choices, you can’t get bored and you don’t have any excuse to eat healthy. We like to combine our plant-based diet with delicious legumes, yummy seeds and nuts. We love eating well and enjoy every mouthful. Here are some vegetarian/vegan dishes we usually have for lunch or dinner!

Why is it important to eat vegetables?

They are very nutritional and contain a good amount of vitamins, minerals, fiber and antioxidants. Having veggies and fruits in your diet helps your body to protect itself from diseases and improve your immune capacity. Go for greens 😀

  • Sweet potato, Ginger & Rice noodles with a creamy avo and lemon sauce, cherry tomatoes, grilled carrots and corn and a bit of rocket with walnuts. Vegan & gluten free.

  • Leftovers! Yay!! Grilled eggplant, paprika chickpeas, roasted potatoes with pepper, marinated soya tofu, brown couscous with cherry tomatoes and sunflower seeds (fresh basil on top). Wonderful!

Flower Veggie Mini Pizza

One of our favorite junk food is pizza, and we make it healthy! How? We told you that we know every single sprout you can find in the supermarket and so we made a pizza base with cauliflower! Can you believe it? A sprout transformation in a delicious and tasty pizza. Of course, is not the crispiest but it’s amazingly good, trust us. Even if you don’t like cauliflower, you should give it a try anyway!

It’s very hot today, Summer is here, and we are very excited waiting for holidays: sun, beach and good things to eat. Summer is in the middle of the year, and we love to have new aims like: do more exercise, meet new people, discover new books, enjoy every moment, laugh a lot and create new veggie recipes like this one we are going to show you now!

It takes time to make the pizza, maybe 1 hour and a half, but it’s worth it. Since we have a plant based diet, we notice that we feel great. Remember is important to nourish your body, with healthy stuff. Eat better, feel better!

Cauliflower Veggie Mini Pizza Recipe:

Ingredients

– 1 medium cauliflower.

– 1 egg.

– 1/3 cup of whole flour.

– 10 raw almonds.

– a pinch of salt.

To put on top:

– Homemade tomato sauce (Use 4 or 5 tomatoes, then peel it and crush it with a blender, leave it in a saucepan until it is reduced).

– Fresh mozarrella.

– The veggies you like (we put asparagus and some cherry tomatoes).

– Some basil.

– Extra virgin olive oil.

Preparation

There 3 different stages you need to follow to make this pizza: boiling the cauliflower, making the dough and making the pizza.

1. Cooking the cauliflower: Wash it properly and cut it in small chunks or use a food processor. Place them in a baking tray with baking paper underneath and grill it for around 20-30 min at 170 C. You can also just cook it in the microwave, it is faster. We prefer the oven though. Once it is ready, let it cool down and take out all the water with a clean kitchen rag.

2. Cauliflower dough: Once the cauliflower is drained, place it in a food processor with the egg, the almonds, the flour and a pinch of salt and blend it all together. Put the dough in the baking tray and make the form of the mini pizzas. 180º C for 20 minutes.

3. Make the rest of the pizza: Once the dough is made, just put the tomato sauce, the fresh mozzarella and all the ingredients that you like. Put it in the oven again for just 15 min.

Once they are ready you can serve them with some basil leaves and a bit of extra virgin olive oil on top. It’s just amaaaazing 😀

¡Hola Bayas! ¿Como estáis?

El verano ya está aquí y viene pegando fuerte… ¡Vaya calorcito! Así que estamos ansiosas esperando las vacaciones: sol, playa y cosas ricas y frescas para comer. Queremos enseñaros esta receta que nos decidimos a probar el otro día, el resultado genial y por eso queremos compartirlo con vosotros. ¡Os va a encantar!

Una de nuestras comidas favoritas es la pizza, así que hemos decidido hacer de ella una versión mas saludable. ¿Cómo? ¡Haciendo la base de coliflor! Sí, como lo oyes, pizza con base de coliflor! No te asustes si no eres muy amigo de la familia de las coles. Aun asi te recomendamos que lo pruebes. ¡No te va a defraudar!

Ingredientes

– 1 coliflor mediana.

– 1 huevo.

– 50 gramos de harina integral.

– 10 almendras crudas.

– una pizca de sal.

Para poner sobre la base:

РSalsa de tomate (pela y parte 5 tomates, ponlos en una cazuela y d̩jalos reducir)

– Mozzarella fresca.

– Verduras al gusto (calabacin, pimiento, esparragos, berenjena, espinacas…)

– Hojas de albahaca.

– Aceite de oliva virgen extra.

Preparación

Hay tres etapas para hacer esta pizza: cocinar la coliflor, hacer la base de la coliflor y hacer la pizza.

1. Preparar la coliflor: Lavar bien la coliflor, cortarla en trocitos pequeños o utilizar un procesador de alimentos, ponerlo todo sobre una bandeja con papel de horno y dejar hornear 170º unos 20-30 min hasta que se quede hecho. Puedes hacerlo también en el microndas y tardaras mucho menos (aunque no somos muy amigas del microndas). Dejar enfriar un poco y escurrir la coliflor con gasas de farmacia o con un trapo limpio.

2. Hacer la base de la coliflor: Una vez escurrida, mezclar con el huevo, las almendras crudas y la harina para que se quede la masa mas compacta y una pizca de sal. Para ello lo trituramos todo con una batidora. Poner otra vez sobre la bandeja y un papel de horno nuevo la pasta de las mini pizzas haciendo su forma con la ayuda de una cuchara. Dejar en el horno a 180ºC  unos 20 minutos, cuando estén hechas sacar la bandeja.

3. Preparar las pizzas: Una vez hechas las bases poner encima los ingredientes que preieras. La salsa de tomate, la mozarrella fresca y las verduras que más te gusten. Meter otra vez en el horno unos 15 minutos.

Cuando las saques del horno, las puedes servir con albahaca fresca y un chorrito de aceite de oliva virgen extra. El resultado es fantástico, están ricas ricas. Hemos disfrutado desde el primer mordisco y estábamos deseando que no acabaran nunca. Pero todo lo bueno se acaba. ¿Te atreves a probarlas?

The Good Life Eatery: Trendy London

The Good Life Eatery is a trendy restaurant in London. We consider it as a “healthy restaurant” and a must in your London restaurant list. You can go there for an amazing breakfast, lunch, or something in the middle, brunch. Because it can be too late for breakfast, but too early for lunch.

The Good Life Eatery is a very tiny place but very charming and modern. There is always a queue, but it is definitely worth it. They also have take away service.

The Good Life Eatery is a trendy restaurant in London. We consider it as a “healthy restaurant” and a must in your London restaurant list. You can go there for an amazing breakfast, lunch, or something in the middle, “Brunch”.

We used to explore and wander around new cozy places every weekend, and one of our favourite areas was South Kensington, were you can feel the posh atmosphere and see astonishing Victorian buildings. In this area you can find the very popular Natural History Museum, the Science Museum and the Victoria and Albert Museum.

The Good Life Eatery is a tiny place but charming and modern. There is always a queue, but it is definitely worth it. They also have take away service.

The menu is pretty wide, you can find, salads, homemade granola, Açai Bowls, poached eggs with mashed avocado on toast, soups, cookies, cakes, smoothies, cold-pressed juices… We tried the matcha green tea with almond milk.. it was yummy! Everything is homemade and made with whole wheat. They have so many options gluten-free.

We had two “Superfood Salads”: The Good Life Salad: Kale, Black and Red Quinoa, Puy Lentils, Roasted Sweet Potato, Toasted Walnuts, Goji Berries, Nutritional Yeast with Orange Tahini Vinaigrette (Gluten-Free/Diary-Free), and the Goodness Bowl: Quinoa tabbouleh, Asian salad, zucchini fettuccine, sweet potato and quinoa falafel, 1/2 seeded avocado, avocado butter and gluten free seeded crackers. They were absolutely amazing and so nutritious!

Unfortunately, we were so full that we couldn’t have dessert. But they looked really nice, and most of them are also gluten free and dairy free (Banana Bread, Blueberry Muffin, Coconut Cake, Chocolate Brownies…).

You should definitely give it a try if you are in London! You won’t be disappointed 🙂

The Good Life Eatery, es uno de los restaurantes londinenses más de moda actualmente, lo consideramos “Healthy restaurant” y tienes que tenerlo en la lista aunque no seas vegetariano, para desayunar o simplemente brunch. No hay término medio o desayunas o haces “Brunch” en Londres; horarios extraños que terminas acostumbrándote a la semana de estar viviendo allí “True story”.

Cada fin de semana explorábamos juntas rincones y sitios con encanto, una de nuestras zonas preferidas es South Kensington, donde se respira aire pijo y arquitectura asombrosa, allí se encuentran nuestros museos favoritos: el Museo de Historia Natural, el Museo de ciencias y el Victoria & Albert, hemos ido decenas de veces y no nos cansamos, si fuéramos ricas viviríamos allí.

The Good Life Eatery pasa desapercibido, se encuentra allí en un local pequeño, pero a su vez acogedor y muy bien decorado, pero siempre tienes que esperar y hacer cola, aunque pasa rápido y merece la pena. Si tienes prisa, ofrece la posibilidad de comida para llevar, pero como siempre el tiempo en Londres no es el óptimo, o llueve o hace frío). Nosotras decidimos esperar y disfrutar de nuestra comida dentro del local.

La carta  “The Good Life Eatery” es bastante amplia, y cada plato es más apetecible que el anterior (tienes que tomarte tu tiempo para decidir que es lo que vas a tomar, sobre todo si eres indeciso/a) y hacen unos smoothies que quitan el habla. Puedes encontrar ensaladas de mil tipos, granola casera, açai bowl, huevos escalfados con aguacate, y por supuesto, cookies y tartas. Todo casero y hechos con ingredientes integrales y de primera calidad. The Good Life Eatery tiene una filosofía como la nuestra, en la que lo primordial es lo que comes.

Nosotras nos decidimos a probar dos tipos de ensaladas vegetarianas (“Superfood Salads¨). Una de ellas fue la “Good Life Salad”, echa a base de col rizada, quinoa blanca y negra, lenteja verde de Puy, boniato al horno, nueces, bayas de Goji y vinagreta de Tahini y naranja. La otra ensalada fue la “Goodness Bowl”, compuesta por pequeñas porciones de ensaladas: ensalada de lentejas, ensalada de espelta, humus de cebolla caramelizada, medio aguacate, “espaguetis” de calabacín y falafel de boniato. ¡Estaban de muerte! ¡Deliciosas y Súper Nutritivas!

Desafortunadamente, no nos quedaba sitio para el postre, pero todo lo que ofrecen tiene una pinta increíble y además casi todos son gluten free y dairy free! (Banana Bread, Blueberry Muffin, Coconut Cake, Chocolate Brownies…).

Es un sitio muy recomendable, en el que todo juega a su favor. Menú amplio, atractivo y saludable, local agradable, buen ambiente, gente joven, y situado en una de las zonas más bonitas de Londres.

¡Un lugar más para apuntar en tu lista de sitios healthy por visitar!

Spinach Quiche with an Oat Crust

You will make this recipe gazillion times. When you decide to be veggie, many people say to you: Are you crazy? How are you going to live without meat?

You will make this recipe gazillion times. When you decide to be veggie, many people say to you: Are you crazy? How are you going to live without meat?

We are proud of how we eat. Having a vegetarian diet is an option, and usually when we go out with our friends it’s difficult to find a place where we can eat good stuff, it’s sad but it’s true. We are used to it now, but at first we felt like weird people.

So we decided to cook our food and enjoy it at home (That doesn’t mean that we never go out for dinner, we absolutely do!) We also invite our friends and family and share with them! Like we do with you!

The other day we made a Spinach Quiche with an Oat Crust. It was great!

Ingredients

For the crust:

– 200gr of oats.

– 75gr soya margarine.

– 1 egg.

– 1 teaspoon of thyme.

– salt.

Filling:

– A paquet of fresh spinachs (not frozen).

– 2 eggs.

– 100 ml vegetable cream.

– Shredded cheese (the one you like).

Preparation

Preheat the oven 180ºC and grease a baking dish. Put in a bowl the ingredients to make the crust: oats, the melted soya butter, egg, thyme and salt in a bowl and mix everything. After that, put the mixture in the base of the baking dish with the help of a spoon. Cook the crust for 20-25 minutes.

While the crust is in the oven prepare the filling. Steam the spinachs, drain them very well. Beat the eggs with the vegetable cream, add the spinach and put some salt, not too much, because maybe you would like to put some shredded cheese on top. Add the filling over the crust and put it again into the oven for half and hour.

We serve it with a side of salad: different types of lettuce, walnuts & pomegranates.

Crunchy and mouth watering are the words to describe the results!

¡Hola bayas!

Otra vez receta con avena… pero esta vez receta salada 🙂

Harás esta receta millones de veces. Cuando decides ser vegetariana, todo tu alrededor te pregunta: ¿Cómo vas a poder vivir sin comer carne?

Nosotras estamos orgullosas de cómo comemos. Ser vegetariano es una opción, y normalmente cuando salimos con nuestros amigos es difícil encontrar un sitio dónde poder comida de verdad y ponernos de acuerdo, es triste pero es verdad. Ahora estamos acostumbradas, pero al principio nos sentíamos un poco “ovejas negras”.

Así que decidimos cocinar y disfrutar en casa. Eso no significa que no salgamos nunca a comer fuera, lo hacemos y a menudo, lo único que tenemos que indagar antes en google el sitio adecuado.

Quiche de Espinacas con base de avena.

Ingredientes

Para la masa: – 200 gr de avena. – 75gr de margarina de soja. – 1 huevo. – 1 cucharadita de tomillo.

– sal al gusto.

Para el relleno

– 1 paquete de espinacas frecas.

– 2 huevos.

– 100ml de nata vegetal.

– Queso rallado (del que más te guste).

Elaboración

Precalentamos el horno a 180ºC y engrasamos el recipiente donde vamos a cocinar la quiche. Mezclar en un bowl los ingredientes para la masa: avena, huevo, margarina de soja, tomillo y sal. Amasamos y extendemos la masa en el recipiente con ayuda de una cuchara. Hornear durante 20-25 minutos.

Mientras la masa está en el horno preparamos el relleno. Cocemos las espinacas y secarlas muy bien, ya que sueltan mucho agua. Batimos los huevos, añadimos la nata vegetal, las espinacas y un poquito de sal. Añadimos el relleno al recipiente con la base de la quiche ya cocinada, queso rallado del que más te guste por encima y lo metemos todo junto al horno 30 minutos hasta que se gratine bien.

Puedes acompañar la quiche con una ensalada de lechuga variada, frutos secos y granada

Crujiente y deliciosa son las palabras para describirla.

Guacamole dip with pomegranate seeds

We must say that is not new that we are in love with avos, we use them to make multiple recipes. Guacamole is one of our favorites, very easy and quick to make, so it’s a perfect option when you are starving and you need to put something in your mouth, before you let your fridge and your pantry empty.

It’s a healthy snack, because avocado is a super nutritious fruit and the tortilla chips we use are bio, they are wonderfully amazing and don’t taste like the normal ones, they have a soft flavour. As far as possible, we try to buy bio products, they are a bit expensive but you can taste the difference. Remember, you are what you eat.

Here is our guacamole recipe for 2 people:

– 3 ripe avocados.

– 1 onion shallot.

– 1 juice lime.

– A handful of cherry tomatoes.

– Salt.

– Olive oil.

– Pomegranate seeds.

Chop the onion shallot very small, add it into a bowl with the smashed ripe avocados (it won’t taste the same if they are not ripe) and cut the cherry tomatoes in dices. Put some olive oil, the juice of one lime, salt and mix everything. You can put some pomegranate seeds on top and…

Tadaaaaaaa!!! Easy peasy lemonsqueeze.

¡Hola, hola!

No es un secreto que nos encantan los aguacates, los utilizamos en muchísimas de nuestras recetas. El guacamole es uno de nuestros tentempiés favoritos, muy sencillo y rápido de hacer, y está taaaan rico. Es una buena opción, cuando estás hambriento y necesitas algo rápido que llevarte a la boca, antes de dejar el frigorífico y los armarios de la cocina vacíos.

Es un aperitivo saludable, los aguacates contienen unas propiedades excelentes, son ricos en vitamina E, contribuyendo a retrasar el envejecimiento. También tiene una alta cantidad de omega 3. Es un fruto excelente para cuidar tu salud y bienestar.

El guacamole siempre suele ir acompañado de tortitas de maíz, esto no significa que vaya a dejar de ser sano; nosotras utilizamos tortitas de maíz bio. Tienen un sabor más suave y siguen estando riquísimas, al menos a nosotras nos gustan más.

Aquí está la receta de nuestro guacamole con semillas de granada para 2 personas:

– 3 aguacates maduros.

– 1 chalota.

– Zumo de una lima.

РUn pu̱ado de tomates cherry.

– Sal al gusto.

– Aceite de oliva.

– Semillas de granada.

Pela, parte y tritura los aguacates con un tenedor (cuanto más maduros estén, más fácil será y más rico estará). Añade la chalota picada y los tomates partidos en trocitos. A continuación añade un poco de aceite de oliva, sal y el zumo de una lima. Mezcla todo para que quede homogéneo, añade unas semillas de granada por encima y… ¡listo!

Con unos pocos ingredientes, tendrás preparado tu guacamole.
