Eat colorful  healthy and fit!

Raw Vegan Raspberry “Cheesecake”

Are you heading to a party soon? Don’t know what to bring? Why not make a cake? Healthy cakes are always welcome! You’ll be the king of the party!

Hi guys! ūüôā

Are you heading to a party soon? Don’t know what to bring? Why not to make a cake? Healthy cakes are always welcome! You’ll be the king of the party!

We are Instagram addicts, we basically follow accounts related to food to give us inspiration. Every time we see a photo of a vegan cheesecake, our mouths water. So ultimately we end up making our own version. So here is our Raw Vegan Raspberry Cheesecake, with no cheese, that’s super nutritious and that’s nothing like the processed cakes you find in the supermarkets.

Foto 24-8-15 16 14 09

So here is the secret!

For the” cheesecake” base:

  • 1 cup of raw almonds.
  • 1 cup of pitted dates.

For the “raspberry” cheesecake:

  • 1 & 1/2 cups of soaked overnight raw cashews.
  • 1/3 cup of coconut oil.
  • 1/3 cup of coconut milk or almond milk.
  • A handful of raspberries.
  • 3 teaspoons of agave syrup.
  • The juice of a lemon.

To put on top:

Blackberries, raspberries  and vegan white chocolate.

Foto 9-9-15 1 59 49

  1. Make the cheesecake base: Put the raw almonds & the soaked dates (pits removed) in a food processor to crush everything well. You will obtain something similar like a cookie dough. With the mixture and with the help of a spoon smash it in a pie shell. While you are doing the cheesecake put it in the freezer.
  2. Make the raspberry cheesecake: With a hand blender or the same food processor crush: the soaked overnight cashews, the coconut oil, the coconut milk (or almond milk), the raspberries, the agave syrup and the juice of a lemon. When it’s ready, poor it over the cheesecake base. Leave it in the freezer overnight.
  3. Remove the cheesecake from the pie shell and decorate it with melted white chocolate and a handfull of berries. Magical!

You will be surprised with the result of this vegan, raw and gluten free Raspberry Cheesecake.

It seems difficult, but it isn’t.

The most amazing cake we have ever made.

Berry Delicious!

Nourish your body ūüôā

Foto 9-9-15 1 59 16

¬ŅQuer√©is conocer¬†el secreto?

Moras, frambuesas y chocolate blanco vegano.

¡Deliciosa!

Cuida y nutre tu cuerpo ūüôā

Hi everyone!!! ūüôā

A few days ago we had lunch ¬†at¬†“NEST”, one of our favorite healthy restaurants in Madrid. They use high quality products and the food is 100% organic. We have been a few times there and we are totally in love, if you are a foodie like us you will love it, we recommend it without hesitation, you won’t be disappointed. Nest Organic is located in the hearth of the city of Madrid “Nuevos Ministerios”.

NEST from outside

You know that we love to explore “the city” we live in as much as possible, Madrid or London, it doesn’t matter. Finding a cozy place it’s not difficult at all in a big city, but it is, if you are very peaky with the food you are eating, like us. We try to look always for lovely and cheap places, and food that is real and tastes wonderful. You may think it’s impossible but it isn’t, for instance, we can find everything we need in this place “Nest Organic”. This restaurant is stunning, the decoration inside is beautiful, the price is super affordable and the staff is always nice with us.

“NEST” Organic only use 100% organic products, this means¬†they don’t use¬†synthetic¬†pesticides and chemical¬†fertilizers, no GMO¬†(transgenic organisms) as well.¬† If you eat organic you will notice an improvement in your health.

Normally obtaining these products are¬†more expensive than obtaining non-organic food, but you won’t notice it much at “NEST”. We had a huge organic lunch: first dish, second dish and a dessert for 13,50‚ā¨ (bread and a drink included).

We always feel really comfortable here. They serve breakfast, lunch and dinner. We have been twice for lunch and we are going to show you what we had right now, excited?

Have we already told you that the staff was amazing? My partner in crime is celiac, and they gave us gluten-free bread for her! 100 points for Nest.

STARTER: We ordered a green salad with green apples, yummy figs, topped with walnuts and a balsamic dressing.

our meal

SECOND DISH & DESSERT: We had “Arroz a la cubana” rice and egg with a delicious tomato sauce and some fried bananas, “Vegetarian¬†Curry Stew” (eggplant, zucchini and butternut). And finally we had “fresh melon” for dessert.

our meal 2

Our bellies were so full, but so happy!

Irene at Nest

We have been in “NEST” before, we love it so we came again, here we had: 1st¬†“mashed potatoes, with red peppers, onion and pomegranates”, 2nd “mushroom risotto” and “white chocolate with pumpkin¬†caramelised¬†seeds”¬†for dessert.

First time at Nest

Is it not awesome? Go and check it out!

¬ŅFant√°stico no?

We are in love with these incredible Twix Bars with Banana Date Caramel. It’s only made with a few healthy ingredients. Could it look and taste more delicious?

Hello superstars!

We are in love with these incredible “Twix” Bars with Banana Date Caramel. It’s only made with a few healthy ingredients. Could it look and taste more delicious?

We are passionate about real food, these “Twix” Bars are like a piece of heaven in our mouth. This recipe is the best and soo easy to make. They are raw and vegan coated with dark chocolate of course, with an oat and a flax seed base. We made a different version to @crazyvegankitchen, one of our favourite vegan girls. Believe it, it’s just so good! Do you need more reasons to make it?

Foto 28-8-15 15 52 14

Biscuit base:

  • 8 Dates.
  • 1 cup of Oats.
  • 1 tablespoon of Flax seeds.
  • Seeds of 1/2 Vanilla pod.
  • 3 tablespoons of water.

Banana date caramel:

  • 1 Banana.
  • 12 Dates.
  • 1 Teaspoon of Stevia.
  • A pinch of Salt.
  • Seeds of 1/2 Vainilla pod.
  • 2 tablespoon of water.

Vegan Dark Chocolate coat.

Banana Date Caramel Bars

  1. First make the oat flour putting the cup of oats in a food processor, then join together the rest of the ingredients of the “twix” base. Soak the dates before, so it is easier to process everything. You will obtain a mixture, then press the mixture in a tray until you obtain the shape of a rectangular giant biscuit. Leave it in the freezer.
  2. While the “twix” biscuit base is in the freezer, we make the banana date caramel. How? We follow the same method. Soak the dates, after that we combine the banana, stevia, salt, the seeds of the 1/2 of a vanilla pod and the water in the food processor. You will obtain a smooth mixture, that’s the banana date caramel!!! With the help of a spatula or a spoon, spread the mixture on top of the biscuit, and leave it again in the freezer for five hours.
  3. Now, you need to cut the giant biscuit¬†in little rectangular bars (like the shape of a Twix) while you are melting the vegan dark chocolate. Coat the bars with the dark chocolate one by one and place it onto a tray with baking paper. Store your homemade healthy “twix” bars in the freezer. Wait until they are ready and eat them… all without guilt!

Super simple, isn’t it?

Very proud of this baby.

Lots of love,

Superfood ME

Food make us go crazy. Almost all the products we buy are organic. Buying organic and high quality products is a bit more expensive but it’s good to invest in yourself and wellbeing.

Hi there!

We have been on holidays for a while! This Summer has been a little bit different than expected, holidays are a good moment to make up your mind and think about what you really want to do next. We will start this stage with a positive mood, fresh ideas and good vibes ūüôā

Positive Vibes

We want to talk about eating real, high quality and unique food. Being a healthy foodie like us, is not tricky at all, because we love eating green, fruits and whole grain products. But also we love eating ice cream, snacks…

Food makes us go crazy. We try to do the right combinations, our shopping is based on veggies, fruits & nuts. Almost all the products we buy are organic. Buying organic is a bit more expensive but it’s good to invest in your wellbeing. We notice that we feel better with ourselves and we enjoy more of the little things in life.

That is why we support the Mood Food movement in which certain foods influence our wellbeing. Fruit is a source of optimism. Whilst the consumption of processed foods, with lots of sugar and toxines provokes depression. Follow the happiness diet!

Lydia and Kiwi

We eat balanced trying to introduce some superfoods in our plant & nut based diet, here are some of our favorite superfoods and tips to keep healthy:

  • Drink a lot of water during day. Every morning before breakfast we tend to drink a glass of cold water with a squeeze of lemon. Detoxing your body is diuretic, helps digestion, cleans your skin and helps you lose weight. It also combats our cravings.
  • Avocados. Everyone knows that we are in love with this amazing fruit with vitamine E ¬†and “good” fats for your skin and body babe! ūüėÄ
  • Flax seed. It is called the new wonder food, some studies show that it can help combat ¬†diseases. It contains other¬†healthy vitamins and minerals: Omega 3, lignans and fibre. We always put some flax seeds over our porridge…delish!

Porridge and Cherries

  • Brown rice. It is better for you than white rice, in appearance white rice may look more appealing but brown rice is richer in fibre, magnesium, potassium, proteins and calcium, they lose most of these properties when they are refined. We also think brown rice is more tasty. High carb diet, yay!
  • Nuts. We have already talked about their awesome benefits. Nuts are a source of energy we need everyday. Excelent for your brain. Can you ask for more?
  • Bananas. The principal ingredient of our Nana Ice Cream. Very nutritional and very delicious. Nom nom.

  • Cherries. One of our favourite berries. They boost your energy levels, they are good for your sight, have anti-inflamatory properties and help you sleep better.
  • Watermelon. We have eaten tons of this fruit this summer. It provides us with antioxidants, hydrates us and it’s easy to digest.

Rico y nutritivo.
  • Cerezas: Son nuestro fruto rojo favorito.
